FLOURLESS LEAN 'N GREEN PROTEIN PANCAKES


INGREDIENTS FOR THE PANCAKES:

5 oz sweet potato, cooked 1 large handful of spinach (approx 1-2 cups) 1 egg white 1 scoop @TryAboutTime Vanilla Whey Protein 1 tsp baking powder 1 tbsp stevia 1/2 tsp vanilla Cinnamon & nutmeg to taste, opt.

FILLING:

1.5 tbsp nonfat plain Greek yogurt 1 tbsp @TryAboutTime Vanilla Whey Protein

-Just stir together.

TOPPING:

1/2-1 tbsp melted NutiLight sugar-free gluten-free Hazelnut & Cocoa Spread Sliced Bananas

DIRECTIONS:

-Blend or food process pancake ingredients all together.

-Cook in a sprayed pan.

-Layer with Protein Filling, and add your toppings. I topped these with NutilLight which is a yummy alternative to Nutella! High in fiber and sugar-free (with natural sweeteners).

Macros for Pancakes only: 254 cals, 0g fat, 31g carbs, 5g fiber, 12g sugar, 32g protein. Macros for Pancakes and Filling only: 295 cals, 0g fat, 32g carbs, 5g fiber, 13g sugar, 41g protein.
